Venison Boboeti with baked sweet potato spuds

  • 500g venison mince
  • 1 onion chopped
  • 1 tsp turmeric
  • 2 tsp masala curry powder
  • 1 tsp cumin
  • 1 clove garlic
  • 1 apple grated
  • 1 Tbls Worstershire sauce
  • 2 Tbl vinegar
  • 1 Tbl apricot jam

Topping:
2-4 eggs (depends on how much your husband loves protein, hee hee)
200ml plain yoghurt
salt and pepper
bay leaves

Saute the onions, garlic and spices
Add the mince and brown
Add the Worstershire sauce, vinegar and apricot jam.
Spoon into a dish greased with avo oil
Mix all the topping ingredients with a whisk and pour over the top
Place 2-3 bay leaves on the top
Bake in oven for 20-30 mins

Boil/bake your sweet potatoes in the oven wrapped in tin foil
Serve with a dollop of smooth cottage cheese and fresh chopped chives
