Thai Style Salmon cakes

Ok I know you all probably sick of this one, but seriously have you any idea how important it is to try and eat fish at least 3 times a week?

This is the one way I love to smash tinned salmon with all the omegas. Love them to snack on as well.

 

Thai Style salmon cakes

 

1 tin atlantic salmon/ 2 tins tuna

2 eggs

2 sweet potatoes mashed

4 spring onions chopped

1 clove fresh garlic crushed

5ml fresh ginger finely grated

30ml fresh coriander chopped

sesame seeds for sprinkling

 

Preheat oven to 180 degrees

Heat some avo oil in a pan and cook the spring onions,garlic and ginger until soft.

Remove from the heat and add the mashed sweet potato

Flake in the salmon/tuna (just make sure you remove the bones if there are any)

Add the eggs and coriander.

Season with herb salt and pepper.

Divide the mixture into patties

Sprinkle sesame seeds on a plate and coat the patties in the seeds.

Grease a baking tray with oil and place your patties in it.

Bake in the oven for about 15 mins.

 

Fantastic as a lunch box snack as well or make it into a tart for a luncheon.
