I needed to find a way to eat more salmon.
Lets face it the tinned one is not all that tastey.
These fish cakes are delicious and I make extra so I have snacks for the next day
1 tin atlantic salmon/ 2 tins tuna
2 eggs
4 spring onions chopped
1 clove fresh garlic crushed
5ml fresh ginger finely grated
30ml fresh coriander chopped
sesame seeds for sprinkling
Preheat oven to 180 degrees
Heat some avo oil in a pan and cook the spring onions,garlic and ginger until soft.
Remove from the heat and add the mashed
Flake in the salmon/tuna (just make sure you remove the bones if there are any)
Add the eggs and coriander.
Season with herb salt and pepper.
Divide the mixture into patties
Sprinkle sesame seeds on a plate and coat the patties in the seeds.
Grease a baking tray with oil and place your patties in it.
Bake in the oven for about 15 mins.
