Boil your sweet potatoes until cooked through
Cook up some mince (chicken/venison/ostrich/beef all available at Abundant Life)
Everyone has their own way to do mince.
I add some chopped onions, garlic, curry powder, chopped fresh tomatoes, dried herbs, and a tbl organic plum/peach jam as a chutney substitute.
You can add some fresh spinach to get that extra veg portion in/grated carrots.
Once mince is cooked slice the potatoes down the middle and spoon a generous serving of mince into the slit.
Top with grated cheese and serve with fresh salad greens
