Oh wow! I cannot wait for dinner on Tuesday!
Boil your sweet potatoes until cooked
For the bolognaise:
500g mince
1 onion chopped
1 clove garlic grated
8 fresh tomatoes chopped
2 Tbls fresh chopped coriander
1 tsp xylitol
2 tsp tomato paste
1 tsp veg stock in 1/2 cup water
Saute onion and garlic
Add the mince and brown
Add the chopped tomatoes and tomato paste and stir well.
Add the veg stock and water and allow to simmer and reduce slightly
Add the xylitol and coriander
Slice your sweet potato in half but not all the way through and stuff with the bolognaise
Top with cheese and if you like grill in the oven until melted
