Pollo (chicken) “pasta”

This is so tastey it should be illegal!


1 punnet marrows shaved with veggie peeler/ wholewheat pasta

Stir fry the marrow until tender.


For the chicken:

4 chicken breasts chopped

2 tsp mixed herbs

1 punnet baby gems chopped

1 c baby corn chopped

3 tsp basil pesto

2 Tbls finely chopped fresh mint

1 1/2 c plain full cream yoghurt/ 1 carton cream

1 tsp salt


Fry chicken in some avo/coconut oil until cooked.

Add the herbs and salt

Add the chopped gems and corn and stir until cooked

Add the basil pesto and the cream or yoghurt

Stir well.

Add the mint and stir

Serve this delish chicken and sauce over the marrow noodles.
