Peachy Chicken Casserole with baby marrow ribbons

  • 1 onion chopped
  • 500g chicken breast cut into strips
  • 1 can natural peach slices no sugar or preservatives if you can OR 8 dried peaches soaked in warm water until plump
  • 1 cup chicken or vgetable stock
  • 2 tsp whole fruit apricot jam
  • Salt and pepper
  • 1/2 peas
  • 4 carrots chopped into chunks

Saute onions until soft
Add the chicken strips nd brown
Pour the stock and stir well
Blend the peaches until pureed (you should have about 1 cup)
Add the puree to the chicken and mix through
Simmer for 5 mins
Add the jam and pepper and peas and carrots
Allow to simmer until carrots are cooked

Use a peeler to shave the marrows into ribbons.
Saute in a pan until soft but still crunchy
