Simple and delish!
4 chicken breasts bashed flat with meat mallet or (if you like me I use a sturdy glass & pummel the poor chicken)
Coconut or almond flour
1egg beaten
Coconut oil
Seasonal veg
1 lemon
Heat a pan with coconut oil
Take your flattened chicken breast and dip it in the coconut or almond flour, then into the egg. then back into the flour.
Cook in the pan until done
Repeat this with all the chicken breasts
In a saucepan place your veg and a splash of water and cook until tender.
Squeeze the juice of the lemon over the veg and season with pepper
