I found some organic, free-range chicken mince in my freezer, and made my own creation :
- 1 onion chopped
- fresh stalks of celery chopped
- 500g pack of chicken mince
- herb salt
- 1 tsp paprika
- 4 tsp homemade organic basil pesto
- 1 cup full cream organic milk
Brown the onion in a tsp of coconut oil
Add the celery and cook through
Add the chicken mince and sprinkle with herb salt and paprika.
Allow to brown.
Add the basil pesto and milk.
Allow to simmer for about 20 minutes.
Add 1 cup frozen peas
I served it with some roasted brinjal from my garden and some seasonal veg tossed in the mix
