Mmm meatballs on a bed of marrow noodles & homemade tomato sauce

For the meatball:

1 onion finely chopped

1 clove garlic grateditalian-meatballs-d

500g venison/beef/ostrich mince

5Tbls fresh herbs

1 organic egg

a good shake of herb salt


a splash of organic balsamic vinegar


In a bowl mix all the above together until all combined.

Grease a baking tray with avo/coconut oil and make meatballs by rolling small amounts of the mixture into balls

Bake in oven for about 20mins at 180 degrees.


For the tomato sauce:

1 onion chopped

1 clove garlic

8 fresh tomatoes chopped

50g tomato paste

2 tsp xylitol

mixed herbs

Fry the onions until soft and add the garlic

Add the tomatoes and tomato paste and xylitol

Allow to simmer for about 20mins or until everything else is ready.

Once its cooked, blend with a stick blender and add the herbs.


For the marrow noodles:

Use a veg peeler and peel the marrows into long strips.

Fry in
a pan until soft.
