For the marinade (don’t worry this does not need to be done hours before)
- zest of 2 lemons
- 1 chilli chopped
- 4 cloves garlic crushed
- 5cm piece of ginger grated
- 60ml olive oil
Slice 1 punnet baby marrows into round discs
80ml lemon juice
60ml orange juice
Mix all the marinade ingredients together.
Mixed half the marinade sauce with the lemon and orange juice and mix through the baby marrows
Leave to marinade for about 10mins
(The other half of the marinade will be used in the mince)
Mix the remaining marinade with :
- 60ml soya sauce
- 60ml chutney
- 500g ostrich mince
- handful of fresh coriander
- 100g roasted cashews/ almonds
Heat oil in a pan and fry the mince until cooked.
Add the coriander and sprinkle the nuts over.
Pack the marrows onto a plate and top with mince.
