Italian meets Paleo chicken bake

Mmm, this is a tastey tastey TASTEY meal!

What you need:roast-pumpkin-+-spinach_Lasagne_10281-652x978

4 organic chicken breasts

2 bags fresh chopped spinach (waiting for you at Abundant Life wholefoods)

1 round of feta/ 1/2 cup grated cheese

For the Italian component:

8 fresh tomatoes

2 cloves garlic grated

1 onion chopped

1tsp xylitol

2 Tbls dried or fresh origanum

2 tsp organic tomato paste

 

Saute the chopped onion and garlic

Add the fresh chopped tomatoes and tomato paste.

Add the xylitol and oreganum.

Add a splash of water and allow to simmer for about 20mins.

Blend with a stick blender until smooth

 

Take your chicken breasts and flatten them just a little with a mallet.

Layer half the cooked spinach and feta mixture into a baking dish

Layer the chicken breasts on top

Spoon half the tomato sauce over

Add the remaining half of the spinach and then end with tomato paste.

Sprinkle some fresh parsley over and some grated cheese if you wish

Bake in the oven for about 30mins until chicken is cooked.

 

Serve with simple garden greens and some boiled sweet potato
