Fish & sweet potato wedges

We were lucky enough to get some beautiful fish this weekend!

WEDGES:

Slice sweet potatoes into wedges/chippies (whatever you prefer)lets_talk

Drizzle with avo oil and some salt

Spread onto a baking tray and bake until crispy

 

FISH:

In an oven proof dish place your fish fillets.

Grate some fresh garlic and squeeze of fresh lemon juice over.

Sprinkle with fresh chopped herbs (parsley, rosemary)

Over the dish and bake until cooked through.

 

Perfect start to summer!
