Fish fingers with sweet potato wedges

  • Hake fillets cut into thickish strips
  • 2 eggs beaten
  • 2 cups desiccated coconut
  • 1 lemon
  • salt and pepper

Place fish strips into egg then into coconut.
Place on a tray
Heat avo oil in a pan and fry fish until golden brown and crispy

Roast sweet potato cut into wedges in the oven until golden
