Mmmm, I love tagine! Spicey cumin flavours and a really easy one-pot meal for a hungry family
Serves 4 comfortably
1 onion chopped
3 cloves garlic crushed
3cm piece of fresh ginger finely grated
500g pasture raised beef strips/cubes/ chicken/ ostrich cubes/ venison cubes
1 carrot peeled and chooped
5ml cinnamon
5ml cumin
500g butternut cubes
375ml vegetable stock
1 tin chopped tomatoes
1 cinnamon stick
2 large baby marrows thickly slices
6 turkish apricots
15ml honey
handful of fresh coriander to serve
Cauli cous cous:
1 head cauliflower chopped up fine a food processor or you can grate it
1 onion
salt and pepper
Heat avo oil in a pan and fry onion and garlic and ginger
Add the beef and cook until browned
add the carrot, butternut, stock, tomatoes and cinnamon
Add the turkish apricots
Lower the heat and let it simmer for 20mins
Add the marrow and let it cook for 10 mins
Mix in the honey and coriander
For the cous cous
Heat olive in a pan and fry onions
add the grated cauliflower and stir until your desired texture. (I like mine with some crunch still)
Season with salt and pepper
Can add fresh chopped dates to cous cous and some cumin if you want a really different flavour
