Chicken is scrumptious! However, the mass production of this meat has made it less desirable in my opinion.
I have settled in my mind that its perfectly ok to be a chicken snob.
Some people like a good quality coffee; I like excellent quality meat.
When preparing one of the whole chickens to roast in the oven, I love to stuff fresh herbs under the skin. It’s during this process that I can visibly see the ratio of skin, fat and meat. Previously when I prepped my chicken (which i had purchased at my local chain store grocer), I would end up with a packet full of fat trimmings which I had to remove from under the skin, a roasting dish brimming with oil and a significantly smaller chicken than the one I had put in the oven.
I know I’m not alone! Why settle for less than the best.
