Cauli mash ( 1 head of cauliflower steamed until soft, add a knob of butter and salt and pepper and blend until smooth)
Sweet potato & butternut mash
The meaty part:
500g beef/venison/ostrich/chicken mince (at Abundant Life Wholefoods you are spoilt for choice)
1 onion chopped
1 clove garlic
4 fresh tomatoes
1Tbls veg stock powder
2Tbls fresh or dried herbs
(add grated carrots/ frozen peas if you want to disguise veggies)
Saute the onion and garlic.
Brown the mince.
Add the tomatoes, stock powder and herbs and veg
Simmer until the flavours have developed (20-30mins)
Place in a dish and top with your mash and some grated cheese
Bake until the cheese is melted and the mash is slightly browned (thats how I like mine)
Serve with steamed veg or salad
