Chilli con Carne with cauli rice

1 onion chopped

1 clove giant garlic

1 tsp cumin

1 tsp paprika

2 carrots grated

2 sticks celery chopped

500g mince

2 Tbls tomato paste

400g fresh tomatoes pureed

fresh coriander to serve


Saute the onion and garlic and add the spices

Add the mince and brown

Add the carrots and celery

Add the tomato paste and puree and a cup of water

Simmer for about 20mins or longer if you have time

Season with pepper

Add some chopped fresh coriander

Serve with cauli rice or boiled baby potatoes
