Carrot and Sweet Potato Bites

Great snacks for lunch boxes! They have a good mix of carbohydrate from the carrots and good fats from the nuts.

1 sweet potato cubed

2 carrots 1 dices 1 grated

2 baby marrows grated

3 tbls sunflower seeds

2 tbls spoons macadamia nuts

1 tsp ground cumin

3 spring onions finely chopped

1 handful coriander or fresh parsley chopped

1 handful dill chopped

1 tbls raw honey

1 egg

3 Tbls coconut flour

Himalayian salt

pepper

 

Steam the diced carrot and sweet potato until cooked

Transfer into a bowl and roughly mash and set aside

Add the grated carrot and baby marrow into the bowl

Add the nuts and seeds, cumin, spring onions, coriander/parsley and dill and stir to combine

Mix through the honey and the eggs and the coconut flour

The mixture should be moist but not wet (if its too wet add more coconut flour)

Season with salt and pepper

Using your hands mould into bite sized balls

Melt butter or coconut oil in a pan and fry the bites until golden brown.
