This is SO quick and SO delish!
- Strips of organic bacon
- chicken breast, halved and bashed flat (I use a glass jar, probably not the best but it does the trick)
- organic spinach chopped and wilted
- 1 round of organic feta
Sweet potatoes cooked and mashed with a splash of organic full cream milk
Once you’ve bashed your chicken breast flat, comboine the wilted spinach with the feta and season with salt and pepper.
Spoon this mixture onto your chicken, down the middle, and then roll the chicken around the spinach.
Wrap a strip on bacon arouond the rolled chicken breast
I secure mine with a tooth pick.
place on a greased baking tray.
Do this for as many breasts as you need.
Sprinkle some rosemary over, cover with tin foil and bake in the oven for about 20-30 mins
